I bought a set of Sportsmatch height adjustable dovetail rings for my FX Streamline .22. I got it zero’d but my scope is maxed out as in not one more click, on the windage to the right.
This bugs me, would it bug you? Should I have gotten the fully adjustable mounts at 2x the price?
I just bought a Sportsmatch adjustable mount, and I ordered it from the UK, because even after shipping from the UK to the US, it was cheaper...! ?
The one you refer to as "2 x the price" -- the ATP66 sells at AOA, PA, and others for $150 plus shipping (up to 163 + SH).

The ATP61 (what you probably have) should be around $60, but all the sellers that had that price were OUT..., and those who still had it sold it for $95.... (is there something wrong with that picture?).

I'm glad you worked it out. I definitely prefer to be as close to optically centered as possible. Mostly, I use Burris Signature rings with the inserts but it's a bit of a pain to switch out the inserts when sighting in a new scope.
Of note, a few other tricks are switching the rings from front to back and turning the rings 180 degrees (front only, back only, and front and back). I'll try just about all configurations before I start adjusting the scope but that's just me.
